Salt & Pepper Chips

The ultimate at home salt and pepper chips. You can get your hands on MSG on Amazon or in a Chinese supermarket. It makes all the difference. These taste exactly like what you’d get with a takeaway.

 

Notes   

You can use this seasoning on chicken, beef, pork. You name it!

MSG isn’t bad for you! It’s the ingredient that makes all the difference.

You can skip making the chips and use frozen chips if you like.

 

Ingredients:

Salt and Pepper Seasoning:

1 tbsp salt

1 tbsp caster sugar

1 tsp MSG

1/2 tsp Chinese 5 spice

2 tsp crushed chilli flakes

1/4 tsp garlic powder

1/4 tsp onion powder

1/4 tsp ground ginger

1/4 tsp ground white pepper

 

Salt and Pepper Chips:

1kg of potatoes, peeled

1 onion, diced

1 red or green pepper, diced

1-2 fresh red chillies, sliced

2 tbsp rice wine

2 spring onions, finely sliced

Oil for frying

 

Directions:

 

FOR THE SEASONING

In a small bowl combine all the ingredients for the seasoning and set aside.

FOR THE CHIPS

Chop the potatoes into chunky chips. Transfer to a large saucepan and cover with cold water. Salt the water and bring to a boil.

Boil the chips until soft but not falling apart. Drain and leave to steam dry.

In a wok heat some vegetable oil over a medium heat. Stir fry the pepper and onion until soft, about 5 minutes. Add the fresh chillies and stir fry for another 2 minutes. Add the rice wine and cook off the alcohol smell until reduced.

Fry the chips at 170c until golden. Add to the wok and toss in the veggies and rice wine. Sprinkle over the seasoning and keep tossing until coated.

Top with the spring onions and serve. Enjoy!
